What is kueh pie tee?
Kueh pie tee is a Peranakan (Nyonya) snack of thin, crisp pastry cups, often called "top hats" for their shape. The cups are filled with braised turnip and topped with garnishes such as egg, peanuts and chilli, then eaten in one or two bites.
A good cup is thin and crisp, holds its shape under a wet filling, and doesn't taste oily. That's what we aim for in every batch.
Storage and serving tips
- Keep them dry: store the cups closed in their container at room temperature so they stay crisp.
- Fill just before eating: the turnip filling softens the cup if it sits too long.
- Drain the filling: a well-drained filling keeps the cups crisp for longer.
- Beyond turnip: the cups also work for canapés, salads and as a crunchy snack on their own.
